Ingredients

  • 10-oz. pkg. frozen chopped spinach, thawed and drained
  • 1-3/4 c. cottage cheese
  • 1 egg, beaten
  • 1/2 c. grated Parmesan cheese, divided
  • 1 c. shredded mozzarella cheese, divided
  • 1/3 c. fresh parsley, chopped
  • salt and pepper to taste
  • 7-oz. pkg. small shell macaroni, cooked
  • 1-1/2 to 2 16-oz. jars Alfredo sauce, divided

Preparation

Step 1

Combine spinach, cottage cheese, egg, 1/4 cup Parmesan cheese, 2/3 cup mozzarella cheese, parsley, salt and pepper in a large bowl. Set aside.

In a separate bowl, toss macaroni with 2-1/2 cups Alfredo sauce. Arrange half of macaroni mixture in a lightly greased 13"x9" baking pan.

Layer spinach mixture evenly over macaroni. Cover with remaining macaroni, sauce, Parmesan and mozzarella, in that order.

Bake, uncovered, at 350 degrees for 35 to 40 minutes.

Serves 6.
