Spaghetti Squash - Thanksgiving Spaghetti Squash w/ cinnamon and cranberries

Ingredients

  • 1/2 spaghetti squash
  • 1 tea. salt
  • 3 Tbsp. brown sugar
  • 1/2 tea. cinnamon
  • 2 Tbsp. butter, cut into small pieces
  • 1/2 cup fresh or frozen cranberries
  • 1 Tbsp. maple syrup

Preparation

Step 1

Preheat oven to 400 degrees. Place squash cut side down in baking dish. Add water and bake for 40 minutes, or until soft and easily pierced with a fork. Scrape out interior with a fork into a casserole dish.

Stir in the salt, brown sugar, cinnamon, butter and cranberries. Cover and return to the oven for 25 minutes. Remove from the oven, drizzle maple syrup over the top, and stir well.

Serve warm.
