Ingredients
- 2-1/2 tbsp Olive Oil
- 2 lg Onions, chopped
- 3 cloves Garlic, peeled and minced or 1 1/2 tbsp Minced Garlic Powder
- 2 med Peppers, 1 red and 1 green
- 2 cans (16oz) Tomatoes, diced
- 1 Eggplant, peeled and cubed
- 3 med Zucchini, halved and cubed
- 2 tsp Sweet basil
- 1/2 tsp Thyme
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 lb Ground Pork or Chicken Sausage

Step 1
In a Dutch oven cook onions and garlic.
Add peppers and tomatoes.
Add other ingredients and spices.
Cook for 30 minutes.
Or
Put in 2-quart casserole dish and bake for 30 min at 350°
