Ingredients

  • 2-1/2 tbsp Olive Oil
  • 2 lg Onions, chopped
  • 3 cloves Garlic, peeled and minced or 1 1/2 tbsp Minced Garlic Powder
  • 2 med Peppers, 1 red and 1 green
  • 2 cans (16oz) Tomatoes, diced
  • 1 Eggplant, peeled and cubed
  • 3 med Zucchini, halved and cubed
  • 2 tsp Sweet basil
  • 1/2 tsp Thyme
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 lb Ground Pork or Chicken Sausage

Preparation

Step 1

In a Dutch oven cook onions and garlic.
Add peppers and tomatoes.
Add other ingredients and spices.
Cook for 30 minutes.

Put in 2-quart casserole dish and bake for 30 min at 350°
