Grilling Spices

An aromatic-spice rub is a wonderful ingredient to keep on hand. It gives meat, fish or poultry an intensely flavorful slightly crunchy outer layer while sealing in the meat's juices. It requires no waiting time; simply rub in the spices and cook.

Ingredients
- 3 Tbs whole coriander seeds
- 3 Tbs cumin seeds
- 3 Tbs dill seeds
- 3 Tbs yellow mustard seeds
- 6 Tbs whole fennel seeds
- 6 Tbs sugar
- 3 Tbs salt
- 1 1/2 tsp freshly ground pepper
Preparation
Step 1
Combine all seeds in a skillet over meduim heat, and toast, shaking pan, until aromatic, about 4 minutes.
Using a spice grinder, coarsely grind seeds in three batches. Transfer to a small jar. Add sugar, salt and pepper. Shake well to combine. The spice blend may be stored in an airtight conainer, at room temperature for up to 6 months
