Lemon Roasted Potatoes

Ingredients

  • 1 lb small potatoes (about 22)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 large clove garlic, diced
  • 1 tsp crushed dried rosemary or thyme
  • 1/4 tsp pepper
  • Coarse sea salt

Preparation

Step 1

Scrub potatoes; pat dry
In bowl, whisk oil, lemon juice,garlic,rosemary and pepper
Add potatoes; toss well

Spread potatoes in single layer in shallow heatproff.
Drizzle marinade over potatoes
Roast in centre of 400F oven, turning a few times, until puffed, browned and tender, about 40 min
Sprinkle with salt

If cutting a large potatoe, cut pieces size of brussel sprouts
