Ingredients

  • 3 Tablespoons butter, melted
  • 1/2 cup brown sugar
  • 1 - 20 oz. can pineapple chunks, drained
  • 1 stick of butter
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups Maple Grove GF Pancake Mix
  • 1/2 teaspoon salt
  • 1 cup milk

Preparation

Step 1

1. Preheat oven to 350*
2. Spread melted butter evenly over the bottom of an 8" square pan, sprinkle brown sugar evenly over bottom, and arrange pineapple chunks on bottom of pan. Set aside.
3. In medium bowl, cream together butter (1 stick) and white sugar. Beat in egg and vanilla until light and fluffy. Combine pancake mix and salt, add to creamed mixture in 3 parts, alternating with the milk.
4. Pour into baking pan, making sure fruit is completely covered.
5. Bake 40 - 50 minutes
6. Invert onto a serving dish, serve warm.
