Potato and Cheese Gnocchi

Ingredients
- 2 lbs. potatoes
- salt
- 1 cup flour
- 1 1/2 cup grated emmenthal cheese
- 2 oz. butter - melted

Preparation
Step 1
Peel and chop poatoes, cook in salted boiling water.
Mash. Stir in flour. Mix well. Roll 1 tsp. of mixture into balls. Press prongs of fork to flatten slightly. Bring saucepan of water to boil. Add a quarter of the gnocchi
When they rise to surface, scoop out. Repeat until all are cooked.
Place gnocchi and cheese in alternate layers in casserole. Pour melted butter over. Bake 350 degree oven 15 minutes.
