- 2 LBS PORK LOIN
- 1 MED ONION DICED
- 3 CARROTS DICED
- 3 CLOVES GARLIC MINCED
- 1 CHIPOTLE CHILE IN ADOBO CHOPPED PLUS 2 T SAUCE
- 2 15.5 OZ CANS CANNELLINI BEANS DRAINED AND RINSED
- 1 20OZ DICED TOMATOES
- 2 T TOMATOE PASTE
- 1 1/2 t OREGANO
- 1 t CUMIN
- 1 t SALT
- 1/2 t PEPPER
- 1/4 CINNAMON AND CAYENNE PEPPER
- 1/4 CUP CILANTRO

Step 1
PLACE ALL INGREDIENTS EXCEPT CILANTRO INTO CROCK POT. COOK ON HIGH 5 HOURS OR LOW FOR 8 HOURS. SHRED PORK WITH TWO FORKS AND STIR IN CILANTRO. SERVE IN CORN TORTILLAS. WITH CRUMBLED QUESO FRESCO, RED ONION AND LIME WEDGES.
