Ingredients

  • 2 cups sugar
  • 3 jars baby carrots
  • 4 eggs
  • 2 cups flour
  • 1 1/2 cups oil
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 8 oz cream cheese
  • 1/2 cup butter
  • 1/2 tsp vanilla
  • 3 1/2 cups icing sugar

Preparation

Step 1

Beat eggs, adding sugar gradually.
Add oil & beat.
Add carrots & beat.
Mix flour, soda, salt, & cinnamon. Gradually add to carrot mixture. Blend well.

Bake in greased 9x13 pan @ 350 for 30-40 minutes.


Beat cream cheese & butter. Add vanilla. Gradually add icing sugar.
