Whole Grain Turkey Enchiladas

Ingredients

  • 1 package of 99% lean ground turkey
  • 2 cups of brown rice
  • 1 can of back beans (rinsed)
  • 1 can of petite cut tomatoes
  • 1 cup of shredded Mexican style cheese
  • 1 packet of taco seasoning mix
  • 1-1/2 cups of enchilada sauce
  • 3 tbsp light sour cream
  • 1 cup of water

Preparation

Step 1

Brown ground turkey in large skillet, add taco seasoning and cook as directed. Add rinsed black beans, tomatoes, brown rice and 1 cup of the enchilada sauce. Combine and heat.

If mixture becomes too think, add water as needed to thin it out a bit. Next add the sour cream and stir until combined.

Add cheese and heat until cheese is melted and combined.

Put 3 tbsp of the meat mixture into the center of a whole wheat tortilla, wrap and place in a 9x12
baking dish. Repeat with remaining mixture and tortillas.

Spread remaining enchilada sauce and cheese over the top and bake at 350 degrees for 20 minutes.
