Ingredients

  • 3/4 cup buttermilk
  • 4 (5ounce) chicken breast
  • 1/4 cup pecans finely chopped
  • 1/3 cups dried bread crumbs
  • 1 teaspoon cajun seasoning

Preparation

Step 1


1. Pour milk in medium bowl and add chicken cover and refridegerate 20 min.
2. Pre heat oven to 350.F combine pecans , breadcrumbs, and cajun seasoing on sheet of wax paper. Remove 1 chicken breast from milk allowing excess milk to drip off. Coat chicken with pecan mixture, gentle pressing to help it adhere. Repeat with remaining chicken pecan mixture. Discard any leftover milk and pacan mixture. Lightly spray chicken on both sides with nonstick spray. Spray lard nonstick overproof skillet with nonstick spray and set over medium high heat. Add chicken and cook till golden , 2-3 minutes on each side. Transfer skillet to over and bake until chicken is cooked through- 10-12 minutes.
