Green Beans and Portobello mushrooms

May prepare several hours in advance through the first step. Shortly before serving, add the beans and water to the pan and prodeed with the recipe.

- 2 tbs Olive Oil
- 1 Shallot, minced
- 8 oz Portobello Mashroom caps, cleaned, halved and thinly sliced
- 3/4 # trimmed Green Beans
- Course Salt and ground Pepper

Step 1
1. In a large nonstick skillet, heat the oil over medium heat. Add the shallot and cook, stirring, until trsnslucent, 3-5 minutes. Add the mushroom slices and cook until tender, 8-10 minutes.
2. Add green beans and 3/4 cup water; season with salt and pepper. Stir to combine; reduce heat to low. Cover and cook until beans are crisp-tender, 7-10 minutes. If any liquid remains, raise the heat and cook until it evaporates.
