Green Beans and Portobello mushrooms

  • 1 Shallot, minced
  • 8 oz Portobello Mashroom caps, cleaned, halved and thinly sliced
  • 3/4 # trimmed Green Beans
  • Course Salt and ground Pepper

Step 1

1. In a large nonstick skillet, heat the oil over medium heat. Add the shallot and cook, stirring, until trsnslucent, 3-5 minutes. Add the mushroom slices and cook until tender, 8-10 minutes.

2. Add green beans and 3/4 cup water; season with salt and pepper. Stir to combine; reduce heat to low. Cover and cook until beans are crisp-tender, 7-10 minutes. If any liquid remains, raise the heat and cook until it evaporates.
