Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 cup butter, softened
  • 1/4 cup honey
  • 2 large eggs
  • 1 cup splenda
  • 1 tsp vanilla extract
  • 1/2 cup 1% fat milk
  • 1 cup fresh or frozen blueberries, thawed

Preparation

Step 1

Place oven rack in top 1/3 of oven.
Preheat oven to 400 degrees. Lightly coat muffin tin with cooking spray.
Sift together flour, salt, and baking powder, set aside.
Beat butter at medium speed with an electric mixer until creamy. Gradually add Splenda and honey, beating until light and fluffy. Add eggs one at a time, beating after each addition. Stir in vanilla. Alternately add flour mixture and milk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Fold in blueberries.
Spoon batter evenly into muffin cups. Bake 20 to 22 minutes or until golden. Remove from pan immediately and cool on wire rack.
