- 1 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 2 cups sifted ap flour
- 2 tsp baking powder
- 1/2 tsp salt
- one can crushed pineapple, drained
- 1 cup quaker oats
- Pineapple Butter Cream Frosting
- 1/4 cup butter, softened
- 2 cups sifted confectioners sugar
- 1/4 cup pineapple juice
- few drops yellow food coloring
Beat butter and sugar together until creamy. Blend in egg and vanilla. Sift together flour, bp, and salt. Add to creamed mixture with pineapple; mix well. Stir in oats. Drop by teaspoonfuls onto ungreased cookie sheets 2 inches apart. Bake in preheated 350F oven for 12 minutes. Cool.
For frosting, beat butter until creamy. Add sugar, pineapple juice and food coloring. Beat until smooth. Frost cookies.
