Ingredients
- A package of unthawed chicken breasts
- 1 package of Frontera enchilada sauce
- 1 orange, yellow OR red pepper course chopped
- 1 can of the Rotel diced tomatoes and green chilies
- Black olives chopped in circles
- Sour cream
- Green onion
- 1 bag of Mexican shredded cheese
Preparation
Step 1
Place chicken breast in a baking pan and pour the enchilada sauce over top. Then sprinkle drained can of Rotel tomatoes w/ green chilies, yellow pepper and black olives on the top of the chicken. Cover with foil and bake in the oven for 350 for 40-1 hour. (until chicken is almost done pull out uncover and sprinkle the Mexican cheese over the top until melted.)
Serve with sour cream on top and diced green onion
