Coconut Pie

Food and wine recipe. From Jennifer Nettles. Her great grandma gave her the recipe. Also called impossible pie because it forms its' own crust. March 2011

This pie can be made ahead of time and refrigerated overnight. Return to room temp before serving.

Ingredients

  • 1 stick butter, melted plus more for greasing pie pan
  • 1 3/4 c sugar
  • 4 eggs
  • 1/2 c self-rising flour
  • 2 c sweetened shredded coconut
  • 2 c milk

Preparation

Step 1

1. Preheat oven to 350 degrees and butter 2 9' pie glass plates.
2. large bowl- whisk melted butter w/ sugar. Add eggs and beat until smooth. Stir in flour, coconut & milk.
Divid mixture between the pie plates and bake in lower third of oven for 1 hour, until pies are firm to the touch and golden.
Transfer pies to rack and cool completely before serving.
