Overnight Potato Kugel

  • lb potatoes,peeled
  • 1 large onion
  • eggs
  • cup oil
  • 1/2 cup boiling water
  • salt
  • pepper

Preparation

Step 1

Preheat oven to 350
Grate the potatoes and onion.(with a Braun food processor use speed 8 and slowly push vegetables in so it shouldn't be too mushy and not too stringy) Mix in the eggs,oil and boiling water. Season with salt and pepper.

Transfer the potato mixture to a 9x13" pan. Bake for 2 hrs,uncovered. After 2 hrs,cover tightly with 3 layers of foil. Place a 9x13 " pan filled halfway with cold water on the bottom rack of the oven. Place the covered kugel on the oven rack directly above the water. Lower oven temp to 220 and bake for 8 hrs or overnight.
