  • 10 GARLIC CLOVES
  • 1/2 CUP ROSEMARY
  • 1/2 CUP SWEET BASIL
  • 4 TSP KOSHER SALT
  • 4 TSP BLACK PEPPER
  • 6 TBSP DIJON MUSTARD
  • 6 TBSP EXTRA VIRGIN OLIVE OIL

Preparation

Step 1

MIX ALL SEASONINGS TOGHTER THROUGHLY
APPLY TO ROAST AND LET STAND IN
FRIDGE OVER NIGHT, THEN COOK IN OVEN
AT 350 F FOR 3 TO 4 HOUR TILL AN
INTERNAL TEMP OF 150F IS REACHED
MORE OR LESS ON DISERED DONENESS
IF SMOKED 225 F BOX SMOKE WITH FAVORITE
WOOD NO MORE THEN 4 HR OF SMOKE
