Spring Salad with Poppy Seed Dressing

Ingredients

  • 1 pkg. salad greens of choice
  • 1 apple, slivered
  • 1/4 cup celery, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup feta or bleu cheese, crumbled
  • 1/2 cup pecans
  • 2 Tbspo. butter
  • 1/3 cup brown sugar
  • .
  • POPPY SEED DRESSING
  • 1/3 cup honey
  • 1/3 cup vinegar
  • 2 tea. Dijon or Brown Spicy mustard
  • 1 Tbsp. yellow onion, chopped fine
  • 1 cup vegetable oil
  • splash of fresh lemon juice (about 1 Tbsp.)
  • 2 tea. poppy seeds
  • salt and pepper to taste

Preparation

Step 1

In a skillet, melt butter and brown sugar. Add pecans and cook over low heat until sugar thickens and pecans are coated, about 2-3 minutes.

Place pecans on parchment paper or alum. foil to cool.

Place greens into a large bowl. Add apple, celery, cranberries, feta (or bleu cheese) and caramelized pecans.

Drizzle with dressing.

DRESSING: Place ingredients in a blender or mini food processor. Mix until well blended.

Store any remaining dressing in the refrigerator.
