Ingredients
- 1 pkg. salad greens of choice
- 1 apple, slivered
- 1/4 cup celery, chopped
- 1/2 cup dried cranberries
- 1/2 cup feta or bleu cheese, crumbled
- 1/2 cup pecans
- 2 Tbspo. butter
- 1/3 cup brown sugar
- .
- POPPY SEED DRESSING
- 1/3 cup honey
- 1/3 cup vinegar
- 2 tea. Dijon or Brown Spicy mustard
- 1 Tbsp. yellow onion, chopped fine
- 1 cup vegetable oil
- splash of fresh lemon juice (about 1 Tbsp.)
- 2 tea. poppy seeds
- salt and pepper to taste
Preparation
Step 1
In a skillet, melt butter and brown sugar. Add pecans and cook over low heat until sugar thickens and pecans are coated, about 2-3 minutes.
Place pecans on parchment paper or alum. foil to cool.
Place greens into a large bowl. Add apple, celery, cranberries, feta (or bleu cheese) and caramelized pecans.
Drizzle with dressing.
DRESSING: Place ingredients in a blender or mini food processor. Mix until well blended.
Store any remaining dressing in the refrigerator.
