Lemon Loaf (Shelia)

Ingredients

  • Glaze:
  • 1 medium lemon
  • 2 1/4 cup flour
  • 1 1/2 tsp double baking powder
  • 3/4 tsp salt
  • 1 1/2 cup sugar
  • 3/4 cup butter
  • 3 eggs
  • 3/4 milk
  • 4 1/2 tsp lemon juice
  • 2 tbs sugar

Preparation

Step 1

Mix flour, baking powder, salt and sugar. Cut in butter until it looks like coarse crumbs. stir in peel of lemon. In small bowl, beat eggs and milk; then add to flour mixture. Pour into greased loaf pan. Bake at 350° for 1 hours 15 minutes.

Heat in a saucepan lemon juice and sugar. Bring to a boil. Cook until thickened. Brush on top of loaf.
