Ingredients
- 4 teaspoon olive oil
- 1/2 cup diced onion
- 4 cloves garlic, pressed
- 1 tablespoon grated gingerroot
- 3/4 cup diced red bell pepper
- 2 cups low sodium vegetable broth
- 1 (28-oz.) can low sodium diced tomatoes
- 1 teaspoon ground coriander
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 2 cups orange juice
- 1 dash sea salt, to taste
Preparation
Step 1
Heat the oil in a large saucepan over medium-high heat; add onion, garlic, gingerroot and red bell pepper and sauté until onion has softened. Stir in vegetable broth, tomatoes, coriander, cinnamon and cayenne pepper; simmer for 10 minutes. Add orange juice, heat through and season with salt to taste; serve.
GLUTEN FREE: Make sure vegetable broth and tomatoes are gluten free.
