Kale with Pears and Onions

  • 1 bunch of kale, coarsely chopped
  • 3 Tablespoons olive oil
  • 1 thinly-sliced yellow onion, about 1 cup
  • 2 pears, cut in 1/4 inch wedges
  • 1/2 teaspoon curry
  • 1/4 teaspoon nutmeg

Step 1

Steam the kale, in batches, if need be, until bright green and wilted, about 3 minutes per batch, then set kale aside. Heat the olive oil at medium-high until hot, then saute the onion, stirring often, until onion is light gold, about 6-7 minutes. Stir in the pear, and cook until crisp-tender, about 2-3 minutes. Fold in the spices and cook 30 seconds. Add the cooked kale and cook, stirring, until heated through, about 3-4 minutes.
