Blueberry Buttermilk Muffins

Ingredients

  • 2-1/2 cups all-purpose flour
  • 2-1/2 tsp baking powder
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 eggs, beaten
  • 1/2 cup (1 stick) butter, melted
  • 1-1/2 cups blueberries, rinsed & drained

Preparation

Step 1

Heat oven to 400 degrees. Sift dry ingredients together into a large bowl. Make a well. Add buttermilk, eggs and melted butter slightly browned. Mix well. Fold in blueberries.

Bake in well greased muffin tins, until puffed and golden, about 20 minutes. Serve warm with butter.
