Jenna's Brat 'n' Eggs Bake (by Jenna G.)
My daughter, Jenna, was in the 5th grade and 11 years old at the time. I created this recipe for her, for her 4-H Meal Preparation Competition at the 2005 Lewis County Fair, Chehalis, Washington. Prior to the competition, Jenna was required to shop for ingredients and calculate cost per serving not to exceed a specified amount per person. The competition required printed copies of her recipe and meal cost calculations to the judge, preparing a meal for 4, table set up, serving two guests, the judge, and herself, clean up, washing, and sanitizing dishes to 4-H standards all within three hours while under the watchful eye of a 4-H judge.
In addition to this recipe, Jenna prepared from scratch Banana-Chocolate Chip Muffins, cantaloupe, and orange juice. When the judge first saw her recipe and menu, the judge told Jenna that she felt her meal was too ambitious for her age. After presenting Jenna with her score and comments, the judge apologized for making incorrect judgments of her abilities. Jenna won a blue ribbon, a Special Merit Award, measuring spoon set, and a Spoonula.

Ingredients
- 4 Pieces of bread, toasted
- 5 Bratwurst, casings removed
- 5-6 Green Onions, sliced
- 2 Cups grated (8 oz.) Colby-Jack, Cheddar, or your favorite cheese
- 8 Eggs, beaten
- 1 1/2 Cups whipping cream
- Pepper to taste
- Salt to taste (optional)
- Non-stick cooking spray
Preparation
Step 1
Pre-heat oven to 400 degrees. Spray bottom and sides of 9” x 13 1/2” baking dish or pan with non-stick cooking spray. Cut or tear toast into bite-sized pieces and spread evenly in bottom of baking dish. Set aside.
Spray large skillet with non-stick cooking spray. Place skillet over medium-high heat and crumble bratwurst into skillet. Continue to break bratwurst into bite-sized pieces and cook through. Remove bratwurst with slotted spoon to baking dish and spread evenly over toast pieces.
Spread green onions over bratwurst and toast pieces. Spread cheese evenly over green onions, bratwurst and toast.
Combine and mix together eggs, cream, pepper and salt (if using). Pour egg mixture over cheese and place baking dish in oven. Bake for 20 minutes.
Lower heat to 300 degrees and bake for an additional 20 minutes. Remove from oven and let rest for 3-5 minutes before serving.
