Spoon Bread - Charlotte Junior League Cookbook

Ingredients

  • 1 cup corn meal
  • 1 pint milk
  • 1 teasp sugar ( I add a little more)
  • 1/2 tsp salt
  • 4 egs, separated
  • 1/2 stick unsalted butter

Preparation

Step 1

Mix meal, meil, sugar and salt in top of double boiler. Cook until thickend. Melt butter in 2 qt. baking dish. Pour excess in to mixture. Add unbeaten egg yolks; beat well. Fold stiffly beaten egg whites and fold. Add to baking dish. Cook for one hour. 300 degrees. Serve immediately.
