Ingredients
- 1 1/2 lb. red potatoes
- salt and pepper
- 2 Tbsp.olive oil
- 2 Tbsp. fresh chopped dill
- 1/2 tea. lemon zest
- 3 Tbsp. lemon juice
- 1 Tbsp. water
- 2 Tbsp. whole-grain mustard
Preparation
Step 1
In a medium pot, bring potatoes to a boil in salted water over high; reduce to simmer and cook until tender when pierced with a knife, 10 minutes. When cool enough to handle, halve potatoes.
In a large bowl, whisk together oil, lemon zest, mustard, dill and 1 Tbsp. water. Add potatoes and toss to combine. Season with salt and pepper.
