French Beans "Nicoise"

Ingredients

  • 1 pound French green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp chopped garlic
  • 1/2 cup chopped sun-dried tomatoes
  • 3/4 cup diced fresh tomatoes
  • 2 tbsp toasted pine nuts
  • 1 1/2 tbsp chopped black olives
  • 1 1/2 tbsp capers, drained
  • 1/2 cup chopped fresh basil
  • Salt
  • Pepper

Preparation

Step 1

Cook beans in a large pot of salted boiling water until nearly tender, about 3 minutes. Transfer to a bowl of iced water, then drain. (This can be done ahead of time).

Heat olive oil in a large skillet over high heat. Add garlic, tomatoes, pine nuts, olives, capers, basil, and salt and pepper to taste. Saute for 1 minute.

Add the beans and saute for 1 to 2 minutes.

Season to taste with salt and pepper.
