Crispy Oven Baked Chicken

Ingredients

• egg coating:
• 1 egg
• 1 Tbs mayonnaise
• CRISPY COATING
• 1/2 cup flour
• 1/4 cup cornmeal
• 1/4 cup cornflake crumbs
• 2 Tbs cornstarch
• 1/2 tsp black pepper
• 1 tsp parsley flakes
• 1 tsp paprika
• 1 tsp salt
• 1 tsp sugar
• 1 tsp garlic powder
• 1 chicken,cut into eights,or 4 chicken legs each cut in 1/2
• 2 Tbs oil
• nonstick cooking spray

Preparation

Step 1

Preheat oven to 350
In a shallow bowl,combine ingredients for egg coating,mix well. Using a second bowl,thoroughly combine ingred for crispy coating.
Spread oil over the bottom of a 9x13" pan,set aside
Dip chicken parts into egg mixture and then roll in crispy coating,coating well. Place in oiled pan.
Spray tops of chicken with cooking spray. Bake uncovered for 75-90 min.
