Ingredients

  • 2

    cans enchilada sauce

  • 1

    can chilies in adobo

  • 1

    red onion

  • 4

    cloves garlic

  • 1

    T taco seasoning

  • 2

    chicken breasts

  • butter

  • 8

    8in tortillas

  • Cilantro

  • Mexican blend shredded cheese

Directions

1. Saute chicken in butter. Add taco seasoning. Remove chicken to cool 2. Add 1 can enchilada sauce, onion, and garlic to skillet and simmer about 10 min. 3. In the meantime, shred chicken with fork. Return to pan with sauce and simmer 5 min. 4. Warm tortillas in microwave for 15 sec. 5. Add chicken, sauce mix, and cheese to tortillas and roll up. Put into greased baking dish. 6. Top all enchiladas with remaining can of sauce and additional cheese. 7. Bake 10-15 min at 400. 8. Remove from oven and top with chopped cilantro.
