Greek Salad

Ingredients

  • 1 (14oz) can Artichoke Hearts, drained and quartered
  • 1 large Cucumber, peeled, halved lengthwise and sliced crosswise
  • 2 medium Tomatoes. cut into wedges
  • 1 small Sweet Onion, halved and sliced
  • 1/2 jar Kalmata Olives sliced in half
  • 5 Tbsp Olive Oil
  • 2 1/2 Tbsp White Wine Vinegar
  • 1 1/2 tsp Dried Oregano
  • 1/2 cup Crumbled Feta Cheese
  • 6 cups Assorted Salad Greens, washed, dried and chopped or torn

Preparation

Step 1

Toss first five ingredients in a bowl. Combine next three ingredients in a jar or salad dressing bottle and shake well. Pour dressing over vegetables and let marinate for about 30 minutes. Add salad greens, toss to coar and sprinkle with feta cheese. Serve.
