Peanut Brittle

Ingredients

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1 cup water
  • 1/2 teaspoon salt
  • 2 cups raw Spanish peanuts
  • 1 Tablespoon butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon soda

Preparation

Step 1

Combine sugar, syrup and water in heavy pan. Cook, stirring constantly, until sugar dissolves. Add salt and nuts. Cook stirring occasionally, to hard-crack stage (294). Add butter, vanilla and soda; stir to blend. Pour onto 2 buttered cookie sheet; while still warm, pull out to desired thinness.
When cold, crack into pieces.

Variation: Substitute 1 cup firmly packed brown sugar for 1 cup granulated sugar.
