Ingredients

  • c. chicken stock

  • 1

    stalk lemon grass, sliced diagonally in 1" pieces

  • 1

    , 2" piece fresh ginger, peeled and sliced

    whole boneless, skinless chicken breasts, cut into 1" pieces

  • 4

    scallions thinly sliced

  • 1

    red bell pepper diced

  • 1

    carrot diced

  • ¼

    c. freshly squeezed lime juice

  • ¼

    c. Asian fish sauce

  • 1

    Tbs. soy sauce

  • slt and pepper to taste

  • 3

    Tbs. chopped cilantro plus a few sprigs for garnish

  • 4

    lg. Boston or Bibb fresh lettuce leaves

Directions

place stock, lemon gras, and ginger in sm. sauce pan to boil lower heat and simmer 10 min. add chicken and poach uncovered stirring until opaque, about 3 min. remove chicken, strain stock and reserve in bowl mix remaining except cilantro and lettuce add chicken and stir to coat stir in cilantro place lettuce leaves on 4 plates mound chicken salad in centers drizzle remaining dressing garnish with cilantro
