Ingredients

  • 2 1/2 c. chicken stock
  • 1 stalk lemon grass, sliced diagonally in 1" pieces
  • 1 , 2" piece fresh ginger, peeled and sliced
  • 2 whole boneless, skinless chicken breasts, cut into 1" pieces
  • 4 scallions thinly sliced
  • 1 red bell pepper diced
  • 1 carrot diced
  • 1/4 c. freshly squeezed lime juice
  • 1/4 c. Asian fish sauce
  • 1 Tbs. soy sauce
  • slt and pepper to taste
  • 3 Tbs. chopped cilantro plus a few sprigs for garnish
  • 4 lg. Boston or Bibb fresh lettuce leaves

Preparation

Step 1

place stock, lemon gras, and ginger in sm. sauce pan to boil
lower heat and simmer 10 min.
add chicken and poach uncovered stirring until opaque, about 3 min.
remove chicken, strain stock and reserve
in bowl mix remaining except cilantro and lettuce
add chicken and stir to coat
stir in cilantro
place lettuce leaves on 4 plates
mound chicken salad in centers
drizzle remaining dressing
garnish with cilantro
