Lain's Quick Cauliflower Soup

Ingredients

  • 4 C cauliflower, chopped into small pieces
  • 3 C chicken broth
  • 1-1/2 C sliced leeks (or yellow onions if you don’t have them on hand)
  • 1 tsp salt (I use sea salt)

Preparation

Step 1

Heat large stock pot over medium heat. Spray with cooking spray. Add leeks and cook until soft. Then add chicken stock and cauliflower. Add salt, turn the heat up to high and bring to a boil; when it boils, turn it down to simmer and let cook until cauliflower is very soft. Remove from heat, and use an immersion blender to blend until smooth (or chunky if you like it chunkier).
