Ingredients

  • 1/2 costco box of fresh spinach
  • 1/4 red onion thinly sliced
  • sprinkle of dried parsley
  • 4 oz feta cheese
  • salt and pepper
  • 1/4 cup olive oil
  • 1 sleeve filo dough from 2 sleeve box

Preparation

Step 1

preheat 350
butter small square glass pyrex dish
heat olive oil in saute pan
wilt spinach lightly
mix together spinach, feta, onion, s + P, and parsley
place 3 pieces of filo in bottom of dish, brush each with butter, add 1/3 spinach mixture, place 6 pieces of filo on top, brush each with butter, add another 1/3 spinach, continue and end with six layers filo on top. brush with butter, cut into 6 squares. Bake about 25 mins. until golden brown. serve warm
