Spanish Roast

Ingredients

  • Garlic-smashed
  • oregano- just a bit
  • oil- small amount
  • salt & pepper

Preparation

Step 1

wash roast & pat dry, make small holes all over roast & add all ingredients mixed into the holes, cover & refrigerate for 2 days before cooking.



Preheat oven to 250, cook covered, last 10 minutes recover cover & squirt w/lemon

about 45 minutes per pound
