The best lasagne I've ever had! I'm not sure where my mom found this recipe, but I have never found another lasagne that compared to it.

Ingredients

  • 12

    lasagne noodles (whole wheat noodles taste great too)

  • Meat Sauce:

  • 2

    lbs ground beef

  • 1

    med. onion

  • 1

    clove garlic

  • 10

    oz mushrooms

  • 16

    oz tomato sauce

  • 11

    oz tomato paste

  • 1

    tsp salt

  • 1

    tsp oregano

  • ¾

    cup water

  • Cheese Mixture:

  • 2

    eggs (slightly beaten)

  • 2

    cups cottage cheese

  • cup grated parmesan cheese

  • 1

    tsp salt

  • 1

    tbsp oil

Directions

Boil lasagne noodles in a pot of water until softened. Drain and set aside. Brown ground beef with onion & garlic. Stir in mushrooms with liquid, tomato sauce, tomato paste, salt, oregano, and water. Simmer 15 min. Combine eggs, cottage cheese, parmesan cheese, salt, and oil. Spread 1/3 of meat sauce on a 9x13 baking dish. Cover with a layer of noodles (4 noodles). Spread 1/3 of cheese mix. Sprinkle with mozzarella. Repeat layers, ending with mozzarella on top. Bake @ 350° for 20-30 min.
