Ingredients

  • 1 egg
  • 250 ml low fat milk
  • 125 ml vegetable oil
  • 50 g caster sugar
  • 30 g raw brown sugar
  • 285 g The Healthy Baker plain flour
  • 2 teaspoon baking powder
  • Half a teaspoon salt
  • 0.25 teaspoon cinnamon powder
  • 1 cup Blueberries

Preparation

Step 1

Preheat an oven to 200 C
Break the egg into a mixing bowl and beat with a fork. Beat in the milk and oil.
Stir in the sugars.
In a separate bowl,sift in the flour,baking powder, salt and cinnamon. Add the egg mixture and combine until the batter is slightly lumpy. DO NOT OVERMIX.
Fold in the Blueberries.
Fill a muffin pan with the batter until two thirds full.
Bake until golden brown.
Let cool.
