Ingredients

    ml low fat milk

    ml vegetable oil

    g caster sugar

    g raw brown sugar

    g The Healthy Baker plain flour

    teaspoon baking powder

  • Half a teaspoon salt

    teaspoon cinnamon powder

    cup Blueberries

Directions

Preheat an oven to 200 C Break the egg into a mixing bowl and beat with a fork. Beat in the milk and oil. Stir in the sugars. In a separate bowl,sift in the flour,baking powder, salt and cinnamon. Add the egg mixture and combine until the batter is slightly lumpy. DO NOT OVERMIX. Fold in the Blueberries. Fill a muffin pan with the batter until two thirds full. Bake until golden brown. Let cool.
