Ingredients

  • 1.5 cups of GF All-Purpose BAKING Mix (like King Arthur Flour's new GF Baking Mix, it's gluten free and made in a Top 8 Free facility)
  • 1 can of 100% Pure Pumpkin
  • 1 cup of rice milk (or preferred non-dairy milk)
  • 1/4 teaspoon of ground cinnamon
  • 1/2 teaspoon of pumpkin pie spice
  • 3/4 of an Enjoy Life Boom Choco Boom Dark Chocolate Ricemilk Bar

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease a mini muffin pan and set aside.
In a large bowl, combine all the above ingredients except the chocolate.
Mix together until well combined.
Using a chocolate shaver, or cheese grater, shave the chocolate down into the bowl.
Stir gently into the mixture until incorporated.
Distribute batter evenly into mini muffin pan cavities, filling each almost full.
Using the back on a spoon, smooth out the tops of the muffin.
Bake for 20-22 minutes.
Remove from oven and let cool in pan.
Optional: Melt down additional chocolate and pipe on chocolate spiders to tops of muffins for added Halloween fun!
