Beans, Sweet Black Beans, PDM

Ingredients

  • 1/4 cup (1/2 stick) butter
  • 1/2 red bell pepper, chopped
  • 1/2 onion, chopped
  • 2 ( 1-pound 13 ounce) cans black beans, drained
  • 1/3 cup firmly packed brown sugar
  • 1/3 cup light corn syrup

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease a 13 x 9 x 2 inch baking dish.

In a large saucpean, melt butter over medium heat. Add pepper and onion. Cook 5 minutes stirring occasionally. Stir in beans, brown sugar, and corn syrup. Pour mixture into prepared baking dish. Bake 30 minutes, or until hot and bubbly.
