Ingredients
- Cake:
- White cake mix
- coconut
- Lime Curd:
- 1/4 cup cornstarch
- 3/4 cup sugar
- 1 cup water
- 2 egg yolks
- Heaping tablespoon lime zest
- 1 tablespoon coconut
- 5 tablespoons lime juice
- Topping:
- Buttercream frosting
- flavor with lime juice
- lime zest
- toasted coconut

Preparation
Step 1
Prepare cake as directed and add desired amount of coconut to batter before baking. Cool and set aside.
Boil cornstarch, sugar and water for 3-4 minutes until thickens. Remove 1/3 of mixture and whisk in egg yolks. Add back to original mixture and whisk until thick and lemon colored. Add lime zest, coconut and lime juice, mixing well. Cool in fridge
Prepare buttercream frosting flavored with lime juice. Place bottom layer of cake on plate and top with lime curd. Place top cake layer and frost entire cake with buttercream frosting. Garnish with lime zest and toasted coconut.
