Ingredients

  • 2 tbl. Extra virgin olive oil
  • 2 lbs. ground beef
  • 2 tsps. Cumin
  • 2 tbls. Chili powder
  • 1/2 red onion diced
  • 14 oz. can fire roasted tomatoes chopped
  • 1 bottle med. Taco sauce (about 1 cup)
  • 1 can kidney beans
  • 1 cup corn
  • Spinach tortillas or your choice
  • 2 1/2 c. shredded cheddar

Preparation

Step 1

Preheat oven to 425. Preheat large skillet over medium heat. Add oil. Saute ground beef & onion. Season with chili powder and cumin.

Brown for about 5 minutes. Add tomatoes and taco sauce. Add beans and corn. Heat 2-3 minutes.

Coat shallow baking dish (9x11) with PAM. Cut tortillas in half. . Build lasagna as follows: meat mix, tortilla, cheese till you run out of meat mix.

Bake 12-15 mins.

I often prepare in advance. Then I heat oven to 350 and cook until hot, about 35-45 minutes.
