Beef Stir Fry

Ingredients
- 12 oz lean beef strips
- 2 T teriyaki sauce
- 1 T oil
- 1 red bell pepper (sliced)
- 6 scallions (cut diagonally)
- 8 oz sugar snap peas (ends and strings removed)
- 2 garlic cloves (minced)
- 1 1/4 C chicken broth
- HOISIN SAUCE
- 1/4 C chicken broth
- 3 T hoisin sauce
- 2 T cornstarch

Preparation
Step 1
Marinate beef in the teriyaki sauce and refrigerate for 30 minutes. In a large skillet or wok, heat 1/2T oil. Stir-fry pepper, scallions, and snap peas for 2 minutes. Add 1/2/T oil, beef, and garlic to skillet and stir-fry for 3 minutes. Return vegetables to skillet and add 1 1/4C broth. Cook covered over medium heat for 3 minutes. In a small bowl, whisk 1/4C broth, hoisin sauce, and cornstarch until smooth. Add to beef and bring to a boil, stirring constantly until thickened. Serve over rice.
