Uncle Lou's Caramel Icing

As caramel icings go, this far-from-ornery one is decidedly easy to prepare.

Ingredients
- 1 3/4 cups powdered sugar
- 1/2 cup salted butter
- 1/2 cup unsalted butter
- 1 cup firmly packed light brown sugar
- 6 tablespoons heavy cream
- 1 1/2 teaspoons vanilla extract
Preparation
Step 1
1. Place powdered sugar in a large bowl. Melt salted and unsalted butter in a small saucepan over low heat. Add brown sugar and cream, whisking until all lumps are dissolved. Bring to a boil over medium heat. Remove from heat, stir in vanilla.
2. Pour hot butter-cream mixture into powdered sugar; beat at high speed with an electric mixer for 2 minutes or until blended and creamy. Cool for 1 hour, stirring occasionally.
