Bacon and Egg Uncrustables

  • Ingredients:
  • 1 loaf soft sandwich bread (white or wheat)
  • 12 eggs
  • 1 cup cooked and crumbled bacon
  • salt and pepper to taste
  • Sandwich Sealer

Preparation

Step 1

Scramble eggs, cooked bacon, salt and pepper in a large skillet. Allow to cool, slightly. Spoon 1/4 cup egg filling onto a piece of bread. Top with a second piece of bread and use sandwich sealer to seal bread together and remove crust. Place in a toaster oven or broiler and toast until bread is golden brown. Serve.
Freezing Directions:

Prepare sandwiches as above but do not toast. Wrap each sandwich in foil and place in a freezer bag (or use empty bread bag). To serve: thaw in fridge. Place in toaster oven or broiler and toast until bread is golden brown and filling is hot. Serve.
Servings: approximately 8 sandwiches
