Ingredients
- Cake:
- 5 large eggs, beaten
- 2 cups sugar
- 1 1/2 cups vegatable oil
- 3 cups self-rising flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 1 cup raisins
- 3 cups finely grated carrots
- 1/2 cup crushed pineapple
- 1/2 cup sweetened flaked coconut
- 1 cup chopped pecans
- Icing:
- 1 lb powdered sugar
- 1 pkg soft cream cheese
- 1 1/2 cups softened butter
- 2 tsp vanilla
- 1 cup chopped pecans
- 1 cup crushed pineapple, drained
- 1 cup sweetened flaked coconut

Preparation
Step 1
Cake:
1. Preheat oven to 350F.
2. Blend eggs, sugar and oil.
3. Sift flour, soda, cinnamon, and salt.
4. Add egg.
5. Fold in raisins, carrots, coconut, pecans and pineapple.
6. Pour into 2 9" pans.
7. Bake for 40 minutes.
Icing:
1. Blend first 4 ingredients.
2. Stir in remaining ingredients.
3. Spread between layers and on top of cake.
