Ingredients
- 1 cup quick oats
- 1 cup whole wheat flour
- 1 tbsp. baking powder
- 1/2 rsp. cinnamon
- 1/3 cup sugar
- 1 cup shredded zucchini, packed
- 2 tbsp. canola oil
- 1 egg, lightly beaten
- 3/4 cup skim milk
- 1/2 cup chocolate chips
Preparation
Step 1
Preheat oven to 400F. Line a muffin tin with paper cups. In a large bowl, stir together flour, baking powder, cinnamon and sugar. Set aside. In a medium bowl, combine zucchini, oil, egg and milk. Add wet ingredients to dry ingredients and stir until just moist. Add chocolate chips. Spoon batter into the muffin cups and bake for 20-22 mins.
