Ingredients
- 3 eggs
- 1 cup sugar
- 1 cup oil or melted butter
- 2 cups zucchini, peeled and grated
- 1 teaspoon vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/2 cup chopped nuts, raisins or chocolate chips, optional
Preparation
Step 1
Beat eggs slightly. Add sugar, oil, zucchini and vanilla, and mix together.
Add dry ingredients, mix until smooth and add nuts, raisins or chocolate chips (if using).
Grease and flour a 9-by-5-inch loaf pan; add batter. Bake 1 hour at 325 F or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes; remove from pan, cool 10 minutes more before slicing.
To freeze bread, let cool completely and wrap in two layers of aluminum foil, label and date. Place in freezer. Bread will keep in freezer up to six months.
