Ingredients
- Prepare 3 cake pans by either using parchment paper or cooking spray
- 2 Cups flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/3 cup Wesson oil
- 3 Cups grated carrots
- 4 Eggs added one at a time
- 1/2 Cup nut meat if desired
- Icing
- 8 oz. Cream Cheese at room temp or softer
- 1 Box powder sugar
- 1/2 Cup butter
- 2 tsp.vanilla
- 1/4 Cup nut meats if desired
- If icing is too thick add a small amounts of milk, if too thin add small amounts of powder sugar

Preparation
Step 1
Bake at 350 degrees for 25-35 minutes or until toothpick inserted in center comes out clean. Use 3 layers.
Cool for 10 minutes on wire rack, when completely cooled ice
