Ingredients

  • Prepare 3 cake pans by either using parchment paper or cooking spray
  • 2 Cups flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/3 cup Wesson oil
  • 3 Cups grated carrots
  • 4 Eggs added one at a time
  • 1/2 Cup nut meat if desired
  • Icing
  • 8 oz. Cream Cheese at room temp or softer
  • 1 Box powder sugar
  • 1/2 Cup butter
  • 2 tsp.vanilla
  • 1/4 Cup nut meats if desired
  • If icing is too thick add a small amounts of milk, if too thin add small amounts of powder sugar

Preparation

Step 1

Bake at 350 degrees for 25-35 minutes or until toothpick inserted in center comes out clean. Use 3 layers.

Cool for 10 minutes on wire rack, when completely cooled ice
