Amazing Coconut Pie

Ingredients

  • 2 cups Milk
  • 4 Eggs
  • 1 cup Baker's angel flake coconut
  • 1/2 stick butter - melted
  • 3/4 cup Sugar
  • 1/2 cup Bisquick® baking mix
  • 1 1/2 tsp. Vanilla

Preparation

Step 1

Preheat oven to 350.

Use LARGE pyrex pie pan.

Set coconut aside. (It will be sprinkled over pie as pie is settling, before baking. Combine milk, sugar, biscuit mix, eggs, butter and vanilla in electric blender. Cover and blend over low speed for 3 minutes.

Pour into greased 9-inch deep pie pan. Let stand about 5 minutes, then sprinkle with coconut. Bake at 350 degrees for 40 minutes. Serve warm or cold.
